Pork and parsnip mash a la Monsieur Justin

So...not too much to say in front of this post, thankfully tomorrow is Friday!!!

Been feeling pretty Canadian this week! We had enough snow to go sledding this week and we will be skating and watching hockey on Saturday. Happy days!

Straight to the food..... Justin's in the kitchen again! :)


Pork and parsnip mash

Ingredients:

300g parsnips, peeled and sliced thinly
1 tsp olive oil
2 thinly sliced free-range pork steaks
1/2 - 1 tsp Gram Masala
30g dried apple, roughly chopped
2 tbsp low fat natural yogurt
2 salad (green) onions, thinly sliced

Method to the madness:

1. Cook the parsnips in boiling water for 8-10 mins until tender.





2. Meanwhile, brush a non-stick griddle pan with olive oil. Cook the pork steaks for 4-5 mins on each side until browned and cooked through. Transfer to warm plates and leave to rest.





3. Drain the parsnips well then return to the pan and mash until smooth. Stir in the garam masala, dried apple, yogurt, and onions. Serve with the pork steaks and a little Bramley apple sauce on the side if  you want! :)
