Salmon Patties with Chia

So here we go with more delightful low carb eats!!

This recipe was super easy, super quick and really delicious.  I'm glad it was easy because I'm pretty tired after a weekend of building, hauling and cleaning. I'm starting to think I need to book in some back massages!

I have to apologize, this was so quick, easy and delicious that I completely forgot to take some pics for you fine folks!


What you're gonna need:

1 Can of wild Alaska pink salmon
1/4 Cup Panko bread crumbs
2 Large Eggs, lightly beaten
1 tsp fresh dill, chopped
2 tbsp Chia Seeds
1/2 tsp garlic powder
salt & pepper to taste

Method to the madness....

1] Preheat oven to 350 degrees. Drain salmon, reserving liquid to use if needed, and remove skin.

2] Mix all of the ingredients together in a bowl. If mixture is too dry, add a little bit of the reserved liquid from the salmon to moisten. (You could add oil, but it will add to the fat and calories.) Discard remaining reserved liquid.

3] Form mixture into 4-6 equal size patties. Cover the surface of a baking dish wit aluminum foil or spray the bottom of a baking dish with oil spray. Place the patties in the dish and bake for about 20 minutes, depending on your oven, until golden brown.

You can pan-fry these patties in cooking oil over medium-high heat for 8 minutes on each side. This will increase the fat and calories of the dish.

4] Serve with your fave side dish! I made a simple spinach salad and threw in some of that fresh dill!
