Justin's Chocolate Chunk Muffins (from scratch!)

So today I get to post about something someone else made in my kitchen! Justin!

For those of you who know Justin, he's not really famed for his love of cooking (hot dogs, tacos), but he has always had an interest in baking. Why you ask? Because it's almost always done all at the same time (not much multi-tasking required), but also because it's exact, an exact science.

He's been prompted by our friend Stephan's newly found joy in baking and I think this gave him the motivation he needed to try it himself!

So without further ado, here is Justin baking chocolate chunk muffins from scratch with a recipe that we found on allrecipes.com.

Ingredients:


2 cups of all purpose flour (we did a double batch so needed 4, we didn't have 4 cups of plain flour so we used 3 cups of white and 1 cup of wholemeal, makes it healthier too right......)
1/2 cup sugar
3 tbsps baking powder
1/2 tsp salt
1 egg
3/4 cup of milk
1/3 cup veg oil (we used sunflower as that's all we had in the house!)
3/4 cup of chocolate chips (we cut up a bar of plain chocolate instead!)

So this will make one batch, 12 muffins dependant on how big you want them, but as mentioned above we did a double batch.

Method to the madness:

1- Heat the oven to 205C. Grease a muffin tray or line it with muffin papers.

First make sure your outfit doesn't get full of flour!
2- In a large bowl combine flour 1/2 cup sugar, baking powder, chocolate chips, salt, mix well. This required Justin to chop up the chocolate bar.

 3- In another large bowl, beat the egg, milk and oil until nicely combined.

4- Pour the dry ingredients into the wet ingredients bowl until moistened - it will be nice and lumpy.

5- Fill muffin papers about 2/3 full, bake for about 20 mins or until a toothpick inserted in the middle comes out dry.




The finished product! Warm, tasty and great with milk!!

Serve warm and enjoy!

I'm soo proud of Justin, although now I know he is capable....watch out!

(he just said next time he wants to make a pie, lookout folks!)

those look yummy!!! in our house its the opposite he loves to cook and i love to bake!! But i also love to cook because its not an exact science i can add a little bit of this a little bit of that and make a recipe my own!! grilling on the other had has been my downfall...since having kids i can't give it my 100% attention which it needs we've had 1 too many almost burnt meals and so it has been suggested that i leave the grilling to the man...LOL!!!
