Homemade chicken burgers a la Monsieur Justin

So I was having a crumby Monday....had some slight frustrations at work and then the exercise class I was looking forward to, hoping it would brighten my spirits, was cancelled due to 'weather'.

So by the time I finally got home I was tired, annoyed, frustrated and thinking tomorrow would be a better Monday. Then Justin reminded me our Tesco delivery had come in. Blargh.....wasn't in the mood to cook yet so proceeded to play with interwebs. But then....I remembered Justin did the grocery order this week.......

Me - "Justin, are you waiting for me to cook supper?"

Justin - "No."

Me - "Is that no...you aren't waiting....or no....I'm not cooking?"

Justin - "No, I'll cook it."

Me - (sly grin forming.....) ,"Were you planning on cooking all week?"

Justin - "Yep!"

Me - "YEeeeeeeesssssssssssssssss! Things are coming up rosey!!!!"

So this weeks blog posts are going to be devoted to Justin's cooking endeavours!


So now the important part.....the recipe!

Homemade chicken burgers with avocado mayo

Ingredients:
400g skinless, boneless chicken breast (either get it already in cubes or cut it up)
70g pancetta
1 small onion, very finely chopped
1 tbsp rosemary, finely chopped
1 avocado, halved
2 tbsp mayo
4 bread rolls (we bought ciabattas and cut them in half)
rocket (optional, we didn't put it on)

Method to the madness:
1. Place the chicken in a food processor and whizz until finely minced. Add the pancetta, onion and rosemary and pulse once or twice more until well mixed but not minced.

2. Shape the mixture into four even-shaped patties. Cook under a medium grill for 6-7 mins each side or in a pan for 5 mins on each side until golden brown and cooked through with no pink meat.

3. Mash together the avocado and mayo. Toast the rolls.

4. Put your burger together!!
